Sweet potatoes for breakfast? Umm, yes.

I’m not crazy. (Well … I may be but not when it comes to breakfast).

This is the perfect kick-in-the-pants way to start your day. It’s filling, full of fiber and protein and OH SO versatile. You all know how much I like love versatile recipes.  Yes, it’s true. You only need 4 main components to make this happen.

1. A cooked sweet potato
2. Nut butter
3. Fruit
4. Nuts, seeds, granola, etc.

BOOM. You’re on your way to a satisfying, power breakfast to get you through until lunch.

Bananas Foster Waffle

The only thing that could make this better would be a big ‘ol scoop of vanilla bean ice cream. But honestly, it doesn’t need it … Unless you have dessert on the brain (which I always do). ☺️

But this is for breakfast today, not dessert. For the record, I’m not the greatest with open flames in the kitchen. With that said, there’s no rum used in this recipe. However, you could easily use rum extract for that flavor. If your a pro with lighting things on fire, have at it! Either way, you’ll have a delicious, fun, and decadent breakfast on the table in the amount of time it takes to cook a waffle. (Or make pancakes!)

With this last round of snow this season (hopefully), my husband and I both have “snow days”  today. We’re snowed in (a total of 11″!) so any plans to venture out was slim to none. He was working hard outside snow shoveling the driveway, so I figured I would work hard in the kitchen … making an easy batch of these. Talk about coming together quickly! And while they were cooling, my husband came back inside. I heard him sniffing the air and following the aroma right into the kitchen. He took one look at ’em and said “Oh my! What are THOSE?!” Needless to say, they look and smell great! I’m always in search of a great blondie recipe, and with this one, I believe I’ve stuck gold.

This recipe is adapted from one of my favorite blogs. The base is flour, egg, and butter free and full of fiber. In the end,  I just added the pretzels. There’s a salty crunch with the sweet, gooey blondies. The perfect combo. 😉

I’ll tell you right now. When these babies were baking in the oven, they smelled like deep-fried elephant ears! Remember those? Do they even still make those at the fairs and such? Or what about churros? Maybe this could also be called churro pancake bites. Mmmm … see what happens when I start thinking about food: a chain reaction starts. One minute it’s pancakes and the next it’s a mexican dessert. Either way, these are delicious and guilt free. Kids will love them as they can dig in with their hands. Who am I kidding? Hands are the best utensils …

So for breakfast, brunch or late night dessert, it’s always a great time for pancake bites. In addition, the possibilities are endless! Consider stuffing each puff with a chocolate morsel and dipping them in caramel sauce. What about using bananas and walnuts and making a banana bread pancake bite? See, endless!
