It’s apparent to me that I’m not a star baker. I’d love to blame it on my genes, but my mom is a great baker. My oven? Nope, don’t think so. I’m pretty sure it just me. So to solve all those problems, I’ve been venturing into the “raw” desserts. I made these around Christmas. Now, to cure that chocolate craving I have way to often, I whipped up a batch of these raw brownie balls. They can be balls, bars, or even cookies! Chocolate Covered Cherry Pancakes

Cherries are in season!! Woohoo! Such an exciting time of the year since cherries can be used with anything; breakfast, lunch, dinner and dessert (Dip them in brownie batter dip: you’re welcome! 😉 )

This morning I was craving chocolate … for breakfast. Nothing unusual around here. So I whipped up your typical pancakes:

CHOCOLATE COVERED CHERRY PANCAKES … with almond maple cream.

The addition of almond extract gives these pancakes that classic candy flavor! Oh, my. Another heathy, dessert-style breakfast in the books. It’s filling (added protein!) and so scrumptious! Any chocolate covered cherry lover will drool over these pancakes.

Yep, I think I just drooled on the keyboard while reminiscing my breakfast. Whoops …

It’s obvious I’m a lover of oatmeal. (Just check out my Instagram feed) Some say it’s old people food. Old people food?? No way! Well, maybe if it was plain oats and water … so very ho hum. But it doesn’t have to be that way!

You could have a bowl of oatmeal every day for a year and have something different every morning. It can be sweet, savory, creamy, crunchy, sinful, or the healthiest bowl known to man.

The recipe listed below is exactly how I made my oatmeal this morning. These are technically “proats” (protein oatmeal, addition of protein powder, etc), but you could sub some vanilla extract and lessen the milk by 1/4C or so … Either way, it’s a delightful and slightly luxurious way to start the day. 😉  Continue reading “cherry vanilla almond oatmeal”

Dessert for breakfast. One of my favorite things. Another favorite thing? When it’s healthier and guilt-free. Boom & boom!

With the weather warming up, I’ll be using a lot of coconut in my dishes. It’s a light, tropical taste that packs big flavor with minimal points (if used the right way 😉 ). I just recently made skinny almond joy bars, and as I knew it would, they didn’t last long. I may have a bar or two left, but they probably wouldn’t be the best breakfast choice. So, pancakes it is! This is nothing unusual for me. Cake for breakfast, lunch, and dinner would be ideal. However, in the real world, that would be frowned upon … but who cares? Cake for breakfast? Absolutely! Make it into an oatmeal and no one will even question it.
