My two loves come together in this dual layer dessert. I’ve taken my banana bread recipe and hid a nice brownie layer underneath … oh sneaky, sneaky 🙂

These bars are rich, thick, and has a nice fudge-y layer. Only one is needed to satisfy that dessert bar craving.

What if I told you, “Hey there. You can eat 5 doughnuts with glaze for only 7pp … ”

You’d probably look at me like I was some crazy person. However, I’m not one to joke around when it comes to doughnuts. So, what’s the deal?

Obviously baking doughnuts is a sure way to lower points. No frying = no additional fat. And remember one of my kitchen intimidations? Yeast? Ugh, I really need to give it a whirl, but not today.

These are yeast-free, done in 7 minutes, healthy, cake-like doughnuts. Secret?

Pancake Mix.

You have some on hand. All you need is a doughnut pan. A great kitchen essential to help switch things up 😉 Now, let’s have our DOUGHNUTS and eat them too! They are great by themselves, but they are even greater with a glaze … which is totally optional of course 😉 (& P.S. … this is another great recipe to have endless combos. We get creative with pancakes, so why not make them in doughnut form?) 🙂

Quest Toastie

We all know protein is an important part of any lifestyle, especially when trying to lose weight. It keeps you full and helps sustain your appetite from one meal to another. Even though I can gnaw on a chicken breast or spoon hummus into my mouth as decent protein source, sometimes I want something sweet. (surprise!)

I was introduced to Quest Bars and haven’t looked back since. So versatile, those suckers. You can bake them (quest bar cups), melt them, eat them as is, or mold them into little balls for a snack to last all day. There’s so many ways to enjoy them and you can more than likely find unique ways on Instagram. As I’ve mention before, I get a lot of inspiration and motivation from Instagram. All the creativity with food just radiates and burns that inner fire that keeps me exploring new things. One of the new things: a quest toastie. This girl is a genius. She rolled up a quest bar like a burrito and warmed it on a skillet. *insert “ah ha!” moment here*  So, what’s next? How about adding in other good stuff 🙂 You know, like marshmallow fluff and peanut butter. These additions make them all gooey and top notch good; another ‘endless possibility’ recipe.

My mom called and asked if I had a quest toastie blog post. She had never made one and I’m sure she felt like she was missing out. But sadly, I had not. While I had her on speaker phone, I walked her through the steps and I made my own as well 🙂 All you need are 3 things: a tortilla, quest bar, and add-ins. Oh, and a skillet!

pb&j thumbprint cookies

pb&j thumbprint cookies | my skinny sweet tooth

These little babies are the perfect 2 bites (or pop ’em in whole) of the classic peanut butter and jelly … in cookie form! Then, we fancy it up with the “thumbprint” detail and fill that crater with jam. Oh la la.

This recipe uses PB2 (powdered peanut butter, which you’ve probably notice I use a lot in my recipes) and has no eggs or oil. Awesome! The cookies came out nice and soft, almost like a no-bake consistency (which I prefer most of the time).

I grew up with grape jelly being the only companion to peanut butter. Strawberry? Ew. Blueberry? Gross.  My, oh my, how things have changed. Grape is the last flavor I seem to reach for these days. I pulled for the strawberry jam this time for the thumbprint cookies, and that decision was well rewarded in my belly.  However, feel free to use whichever jam/jelly you have on hand!
