It’s taco Tuesday! Why wait until lunch or dinner to celebrate this weekly tradition?
Cherries are in season!! Woohoo! Such an exciting time of the year since cherries can be used with anything; breakfast, lunch, dinner and dessert (Dip them in brownie batter dip: you’re welcome! 😉 )
This morning I was craving chocolate … for breakfast. Nothing unusual around here. So I whipped up your typical pancakes:
CHOCOLATE COVERED CHERRY PANCAKES … with almond maple cream.
The addition of almond extract gives these pancakes that classic candy flavor! Oh, my. Another heathy, dessert-style breakfast in the books. It’s filling (added protein!) and so scrumptious! Any chocolate covered cherry lover will drool over these pancakes.
Yep, I think I just drooled on the keyboard while reminiscing my breakfast. Whoops …
I’m absolutely obsessed with this flavor combination: rosemary & raisin. It all started with these. I always have a box in my pantry. If you’re near a Trader Joe’s and you haven’t tried these yet, put them on your grocery list. NOW. You can thank me later. 🙂
But on to breakfast …
I’ve been wanting to put those two flavors together for a while now. As I was looking in my pantry this morning trying to figure out what kind of pancakes to have, I spotted the raisins. Then, I remembered there was fresh rosemary in the fridge from when I wanted to make something (not sure what yet 😉 ). So, 10 minutes later, rosemary raisin pancakes were born and it was a moment I’ll cherish forever. Ha! They are really that good. Topped with some maple cream and they were a memorable breakfast. With the weather warming up, I’ll be using a lot of coconut in my dishes. It’s a light, tropical taste that packs big flavor with minimal points (if used the right way 😉 ). I just recently made skinny almond joy bars, and as I knew it would, they didn’t last long. I may have a bar or two left, but they probably wouldn’t be the best breakfast choice. So, pancakes it is! Chocolate (protein!) pancakes topped with coconut maple cream, shredded coconut & sliced almonds … I know, right?!

It’s Derby day here in the good ‘ol state of Kentucky! My husband and I live in derby trifecta, but we don’t usually partake in derby festivities (besides placing a bet here and there. Go Intense Holiday!) However, the derby food scene is incredible. Mint Juleps, Hot Browns, and the oh so delicious Derby Pie: filled with chocolate, pecans, and BOURBON. Nothing like some booze in your pie. Or in this case, first thing in the morning pancake style 😉
Even though I didn’t use actual bourbon in the recipe, I found a pure bourbon vanilla extract at Trader Joes. I’ve used it in my egg mixture for french toast and many other things. If you can, get you some! I hear it’s great in cookies, too 😉
These pancakes may look and taste fancy, but it’s nothing of the sorts. (I may or may not have wanted to put on a fascinator or luxe derby hat while I ate these) 😉 It has minimal ingredients and so easy to throw together. And here’s how I did it.
