When mother nature decides to be a frigid you-know-what, comfort food is what most people turn to.

I remember those snow days: staying home from school, watching Bob Barker and getting so excited when Plinko made an appearance, making tomato soup (Campbell’s of course). But there’s the other half to the tomato soup that completed lunch.

GRILLED CHEESE

A toasty, buttery, ooey-gooey, cheesy sandwich that went with tomato soup like salt to pepper, peanut butter to jelly or Plinko to Price Is Right … a match made in food heaven.

So what’s more fun that dipping a grilled cheese into a creamy tomato soup? Cutting it into “croutons” of course. Drop them in soup or sprinkle them on a boring salad. They also make great, super easy finger foods for your toddler, or a great party favor everyone loves. Endless possibilities.

skinny banana “pudding”

At almost every family gathering, my aunt makes this ridiculous banana pudding that has me day dreaming of it after each function and counting down the days until our next one.

Quite frankly, I don’t have the patience or enough stretchy pants to make her version anytime I please. So what do I do? I make my own banana “pudding” … without the fattening pudding part. Ha. I’m thinking yogurt. Yes, yogurt! Protein packed, thick, creamy (greek) yogurt. It’s not the “pudding” that makes the dessert what it is, it’s the flavors. This skinny, single serving, healthier version, totally screams banana pudding.

Due to the high protein, this makes a great post workout snack. Now that’s something to look forward to during your last rep.

raw gingerbread bars

I recently found these gems at Trader Joes. Now, I’m not always a fan of gingerbread but when the holidays roll around, I can’t get enough. Gosh, what’s wrong with me? 😉 …

Anyway, those cookies are so delicious and before I knew it, I had ate Mr. Gingerbread and his entire extended family … and their cousins. :/ Whoops.  They’re small and very, very addictive. It’s not until half the box is gone when I realized they are a whopping 2pp each. EACH! Insanity!

From that moment on, those were only for my husband and I placed them out of my sight. So now what am I going to do about my gingerbread craving during the holidays? I’ll tell you what I’m going to do … I’m going to eat gingerbread. Yep, gingerbread … in a raw, clean eating, no bake form. Finally, something I can feel good about eating. (I’ve been on a raw/clean eating kick lately … remember these?)

Oh! And after one bar, I’m completely satisfied. One is all I needed. There’s no going back and forth into the box, pulling out innocent gingerbread babies. See, we’re saving lives! 🙂 Continue reading “raw gingerbread bars”
