italian baked egg

italian baked egg | my skinny sweet tooth

Quick! Name something you could eat as a main dish for any meal: breakfast, lunch, and dinner. … … … …  Ok, ok, pizza doesn’t count! (but who doesn’t love cold pizza the next morning?! yum! 😉 )

I’ll give you a hint: it’s the perfect balance of melty cheese, buttery egg yolk, and molten tomato sauce. All 3 make up one of the best things I can rely on when I need that “comfort food” fix -any time of day! Yep, it’s:

ITALIAN BAKED EGG, ITALIAN BAKED EGG!

For this recipe, I love to add polenta. It’s so creamy and adds a depth of flavor that sets this apart from other italian baked eggs. I’ll never make it without polenta. Trust me, it’s that good.

I want everyone to try these italian baked eggs and fall in love like I did. Maybe I should host a brunch. You’re all invited! 😉

chicken & black bean soup

chicken & black bean soup | my skinny sweet tooth

I love mexican food. The beans. The rice. All that is fattening and glorious. However, sometimes I’d like to enjoy those mexican flavors without unbuttoning my pants after dinner. (Don’t judge. We’ve all been there 😉 )

This soup recipe is easy and waistline-friendly. It also packs a ton of flavor and made in less than 5 minutes.  Muy buena!

caprese polenta stacks

caprese polenta stacks | my skinny sweet tooth

One of my favorite things to order at an italian restaurant is the caprese salad. It seems to come in different forms, but they all compare with the main ingredients: tomatoes, basil, mozzarella, and balsamic. Angels sings when these come together. I had recently made a caprese chicken and it was incredible. This go round, I had no chicken but I did have a tube of organic polenta in my pantry …

I could have easily thrown together this, but wanted something easier. Easier?! How could it get any easier? Well, let me tell you. The hardest part of this meal: slicing tomatoes. Oh, and maybe waiting for the cheese to melt … but that glorious moment will come 🙂 I had these as a vegetarian meal with a side of brown rice, but these would make the most perfect hor dourves that would impress just about anyone. I’ve broken up the points for however you decide to serve them; hor dourves, appetizer & meal. Enjoy!

crab & avocado zoodles

crab & avocado zoodles | my skinny sweet tooth

If you haven’t been making noodles out of veggies by now, well then, you’re completely missing out. This recipe came about as most of mine do: cleaning out the fridge! That’s where creativity shines and recipes like this are born.

Crunchy zoodles, creamy avocado, and that crab flavor makes a great side dish or a main meal. Only 3 main ingredients. That’s it! I love when it works out that way 😉 This dish is so fresh and light that it’s perfect for these summer months.

Quick blog post for a quick and easy meal.

Pesto Quinoa Zucchini Boats

I seem to always have zucchini on hand these days. It’s in season and there are uses upon uses for them things. I’ll never tire of the “zoodles” herehere, or even here, but it’s time to switch things up a bit. 🙂
