I’ve been on a spread kick lately (jam, anyone?) and quite frankly, butter isn’t one of them. I’ve slowly (and officially) kicked the butter habit. I no longer need it on pancakes, waffles, or even grilled cheese! What’s my secret?
I’m usually not one to have a whole blog post about oatmeal. But every once in a blue moon, there sits a bowl in front of me and it completely blows my mind with how delicious it is. So today, coconut cream pie oatmeal gets its debut …
It’s so creamy and coconutty. I felt like I was having dessert and not breakfast … and that’s completely ok with me 🙂 Plus, this oatmeal is packed with protein! With the addition of liquid egg whites (which make the oatmeal so fluffy and light) and a greek yogurt topping, I was full for hours. You could also sub coconut whipped cream for the greek yogurt. OR drizzle it with coconut maple cream. Now that would be delicious, too 😉

With the weather warming up, I’ll be using a lot of coconut in my dishes. It’s a light, tropical taste that packs big flavor with minimal points (if used the right way 😉 ). I just recently made skinny almond joy bars, and as I knew it would, they didn’t last long. I may have a bar or two left, but they probably wouldn’t be the best breakfast choice. So, pancakes it is! Chocolate (protein!) pancakes topped with coconut maple cream, shredded coconut & sliced almonds … I know, right?!

There’s something special about an almond joy. The chocolate and coconut can easily transport me to a topical place. Sometimes I feel those commercials prove true. You know the ones; where someone tears open that blue wrapper, and along with the chocolate and coconut, a palm tree appears. Yep, that’s me; eyes closed, sitting in my bathroom with my feet in the tub, inhaling an almond joy. Yet, in my head, I’m at the beach with my feet in the water. I just hope my husband doesn’t walk in on me and wonder what I’m doing … but hey, maybe one day he’ll join me. If I’m willing to share. I do love him, but he should bring his own almond joy just in case. 😉
Since my jeans won’t let me inhale almond joys like I used to, I’ve decided to come up with my own version. They’re healthier, too! Oh, and the best part? NO BAKE! It’s 85° outside, turn that oven off! 🙂
Each bar is only 2pp and satisfies that chewy, chocolate and coconutty craving. 100%. Maybe my husband will join me on the side of the tub with a plate full of these.
