Healthy CocoChip Almond Cookies

There was a girl that used to work with me. Her name was Angie. She was health conscious and tried to make better food decisions for herself as well as her family. Maybe that’s why we became really good friends. 🙂 Well, one day she had brought in these “cookies”. I took one look at them and I knew I wanted one. There were flecks of chocolate, nuts and chia seeds. I had to have the recipe. Luckily for me, she wrote down what she could remember. And the first thing I did when I got home? I made some darn good-for-you cookies.

I’ve made a few variations of these cookies. I would swap out walnuts for almonds, dried cherries for raisins, chocolate for white chocolate. These however, are my favorite. It’s obvious I love anything coconut and chocolate. (here and here … oh, and here), but feel free to add your favorite combos.

These cookies aren’t overly sweet (depends on how much honey/chocolate you use). They could be gluten-free, and holds everything that is good for your body. I kind of feel guilty calling these bad boys cookies, but that just makes it more treat-worthy 😉 Not a fan of cookies (do those people exist?!), then make them into bars. Problem solved. 😉

Breakfast Sushi

Sushi isn’t just for lunch or dinner. Granted, you won’t find any fish or wasabi here. I’m talking about replacing all those savory elements with fruit and all good things to start your day off right. I’m also getting rid of the rice and replacing that with a low carb, high fiber tortilla. Basically, this is a no-fuss breakfast option to help pull you out of the typical cereal and bran muffin rut. Have your kiddos customize their own “roll”. They’ll have fun with it, too! Who wouldn’t love eating with chopsticks for breakfast?

Listed below are just two of my sushi creations, but the possibilities are endless. As I have more combinations, I’ll update this post 🙂 But go for it! Use what you have on hand and get creative!

(clean eating) almond joy bites

It’s no lie that I’m a sucker for an Almond Joy candy bar (or chocolate & coconut) … any time of day. Breakfast? Dessert? Yes, YES!

However, eating candy bars everyday is not considered “in moderation” in my book. Once a week, perhaps. But in an attempt to eat a little cleaner, these will be my Almond Joy swap. Who needs a sugar-filled, coconutty candy bar? Not this girl.  If I ate one of these little nuggets with my eyes closed, I would think I was chomping on the real deal. Seriously … you’re only 4 ingredients away from satisfying that Almond Joy/candy bar craving.
