With the weather warming up, I’ll be using a lot of coconut in my dishes. It’s a light, tropical taste that packs big flavor with minimal points (if used the right way 😉 ). I just recently made skinny almond joy bars, and as I knew it would, they didn’t last long. I may have a bar or two left, but they probably wouldn’t be the best breakfast choice. So, pancakes it is! Chocolate (protein!) pancakes topped with coconut maple cream, shredded coconut & sliced almonds … I know, right?!
