It’s Derby day here in the good ‘ol state of Kentucky! My husband and I live in derby trifecta, but we don’t usually partake in derby festivities (besides placing a bet here and there. Go Intense Holiday!) However, the derby food scene is incredible. Mint Juleps, Hot Browns, and the oh so delicious Derby Pie: filled with chocolate, pecans, and BOURBON. Nothing like some booze in your pie. Or in this case, first thing in the morning pancake style 😉
Even though I didn’t use actual bourbon in the recipe, I found a pure bourbon vanilla extract at Trader Joes. I’ve used it in my egg mixture for french toast and many other things. If you can, get you some! I hear it’s great in cookies, too 😉
These pancakes may look and taste fancy, but it’s nothing of the sorts. (I may or may not have wanted to put on a fascinator or luxe derby hat while I ate these) 😉 It has minimal ingredients and so easy to throw together. And here’s how I did it.
