It’s no lie that I’m a sucker for an Almond Joy candy bar (or chocolate & coconut) … any time of day. Breakfast? Dessert? Yes, YES!

However, eating candy bars everyday is not considered “in moderation” in my book. Once a week, perhaps. But in an attempt to eat a little cleaner, these will be my Almond Joy swap. Who needs a sugar-filled, coconutty candy bar? Not this girl.  If I ate one of these little nuggets with my eyes closed, I would think I was chomping on the real deal. Seriously … you’re only 4 ingredients away from satisfying that Almond Joy/candy bar craving.

Dessert for breakfast. One of my favorite things. Another favorite thing? When it’s healthier and guilt-free. Boom & boom!

With the weather warming up, I’ll be using a lot of coconut in my dishes. It’s a light, tropical taste that packs big flavor with minimal points (if used the right way 😉 ). I just recently made skinny almond joy bars, and as I knew it would, they didn’t last long. I may have a bar or two left, but they probably wouldn’t be the best breakfast choice. So, pancakes it is! This is the perfect snack. And by perfect, I mean healthy, delicious, easy, and healthy. Oh, did I say that twice? … Because it’s true!!
This snack gives a plentiful punch of protein (8g!), fiber (almost 9g!), omega 3’s, & antioxidants; sophisticated enough for any adult and fun for the kiddos. WIN, WIN!
