The only thing that could make this better would be a big ‘ol scoop of vanilla bean ice cream. But honestly, it doesn’t need it … Unless you have dessert on the brain (which I always do). ☺️
But this is for breakfast today, not dessert. For the record, I’m not the greatest with open flames in the kitchen. With that said, there’s no rum used in this recipe. However, you could easily use rum extract for that flavor. If your a pro with lighting things on fire, have at it! Either way, you’ll have a delicious, fun, and decadent breakfast on the table in the amount of time it takes to cook a waffle. (Or make pancakes!)
I’ll tell you right now. When these babies were baking in the oven, they smelled like deep-fried elephant ears! Remember those? Do they even still make those at the fairs and such? Or what about churros? Maybe this could also be called churro pancake bites. Mmmm … see what happens when I start thinking about food: a chain reaction starts. One minute it’s pancakes and the next it’s a mexican dessert. Either way, these are delicious and guilt free. Kids will love them as they can dig in with their hands. Who am I kidding? Hands are the best utensils …
So for breakfast, brunch or late night dessert, it’s always a great time for pancake bites. In addition, the possibilities are endless! Consider stuffing each puff with a chocolate morsel and dipping them in caramel sauce. What about using bananas and walnuts and making a banana bread pancake bite? See, endless! (#weightwatcher points will vary of course 😛 )
Cherries are in season!! Woohoo! Such an exciting time of the year since cherries can be used with anything; breakfast, lunch, dinner and dessert (Dip them in brownie batter dip: you’re welcome! 😉 )
This morning I was craving chocolate … for breakfast. Nothing unusual around here. So I whipped up your typical pancakes:
CHOCOLATE COVERED CHERRY PANCAKES … with almond maple cream.
The addition of almond extract gives these pancakes that classic candy flavor! Oh, my. Another heathy, dessert-style breakfast in the books. It’s filling (added protein!) and so scrumptious! Any chocolate covered cherry lover will drool over these pancakes.
Yep, I think I just drooled on the keyboard while reminiscing my breakfast. Whoops …
