Last month, my husband and I planted our very first garden. Since we had absolutely no idea what we were doing, we started with the things we enjoy the most: tomatoes, zucchini, cucumber, banana peppers, strawberries, and even rhubarb. I also have a tiny herb garden where there is lavender, rosemary, thyme, and basil. Gosh, it smells heavenly. Just this past week, my basil had doubled!
I began searching online to find ways to use it up as quickly as I can. I came across many recipes with basil being paired with strawberries … and now I know why. I love infusing my water with this dynamic duo. But what’s even better? Having it for breakfast.
I just want to say that this isn’t your average morning toast. It isn’t even your average ricotta toast. I’ve had many versions, but this one has to be hands-down my favorite. Why? The addition of lemon zest. It’s responsible for bringing this to a whole other level …like, cloud 9 level. Ahh, so good.
I’ll tell you right now. When these babies were baking in the oven, they smelled like deep-fried elephant ears! Remember those? Do they even still make those at the fairs and such? Or what about churros? Maybe this could also be called churro pancake bites. Mmmm … see what happens when I start thinking about food: a chain reaction starts. One minute it’s pancakes and the next it’s a mexican dessert. Either way, these are delicious and guilt free. Kids will love them as they can dig in with their hands. Who am I kidding? Hands are the best utensils …
So for breakfast, brunch or late night dessert, it’s always a great time for pancake bites. In addition, the possibilities are endless! Consider stuffing each puff with a chocolate morsel and dipping them in caramel sauce. What about using bananas and walnuts and making a banana bread pancake bite? See, endless! (#weightwatcher points will vary of course 😛 )
It’s only fitting to have this post today since it is National Nacho Day! And of course, I’m not one to ignore such days. 😛
This is, yet again, another quick and super simple meal that will please a crowd. Yes! Even a football party crowd. For all you weight watchers and carb nixers, you won’t even miss the chips! Promise!

For this recipe, I love to add polenta. It’s so creamy and adds a depth of flavor that sets this apart from other italian baked eggs. I’ll never make it without polenta. Trust me, it’s that good.
