Polenta can seem like one of those scary ingredients that leaves everyone thinking “What in the world do I do with that?”

I was definitely one of those people. How do I cook it? Is it for breakfast? Is it similar to grits? Gosh, way to many questions for something so simple. I like things to be easy and the easier it is for me to cook with, the more likely I am to do so. I found a pre cooked, ready to heat and serve polenta at Trader Joes. So, I bought it and there it stayed in my pantry for the longest time. Then one day, I sat the polenta on my counter and stared at it, hoping it would start turning itself into something amazing. Nothing happened … sheesh, guess I’ll have to do it myself … 😛

I have to admit, this is probably one of the easiest, quickest, thrown together meals I’ve ever made … and it tastes so, so good. My friends’ italian husband even gave it 2 thumbs up 🙂

Today is my best friends birthday and one thing comes to mind when I think of her: Chocolate & peanut butter.  This girl loooves her Reese cups. So, it’s only fair that I make something delicious for her big day (even though she’s 2 hours away and I’m the only one that’s going to enjoy them. Sorry, Judd 😉 Happy Birthday anyway xoxo)

Great timing as well because I’ve also been wanting to play around with a butter-less graham cracker crust. Found a few online and did some tweaking here and there … and tada! I’m satisfied with the results; satisfied enough that I’m ready to make it on a bigger scale. Keep an eye out pie lovers. Good things are happening here … 🙂

Something fast, easy, and healthy was on the menu for tonight. Plus, my spinach was looking pretty rough. I had all the ingredients and this is what I came up with …

Who wants a frittata for one? Umm, this girl! I had this made and ate in 10min!

I know, I know. Technically a frittata involves crust, meat, an oven, etc. Well, this is a crustless, oven less, meatless frittata … or an open faced omelet. Whichever you prefer 😉 Frittata sounds fancier. Ooh la la.
