Wow. What a mouthful.

A guilt-free mouthful at that! Spaghetti squash has been a staple in low carb dieting for quite some time. Since it has visual and textural similarities of spaghetti pasta, one could easily sub this low cal veggie for almost any pasta dish. Oh, and talk about having an easy meal, this comes together rather quickly … which as we know, I’m a huge fan of. 🙂

I’ve been meaning to post this since it was such a hit on instagram. Other IGers, such as this lovely gal have recreated this and have been in love ever since. There are other stuffed squash recipes all over Pinterest, but I do love me some mushrooms … and buttery, cheesy alfredo. Mmmm … cheese.

I’m a lover of beer and most certainly a lover of bread. Toss in some flavors of fall and you have the perfect accompaniment for some warm beer cheese or a nice pat of butter.

Consider this bread rustic, as it’s crusty on the outside, soft, thick, hearty and all great things a pub style bread should have on the inside. It’s imperfectly perfect.

rosemary raisin muffins

These are the beautiful beginning to something so familiar in my household now-a-days: raisin rosemary crisps.

Raisins and rosemary are such a unique flavor combination that is unlike anything I’ve had. It’s down right amazing. I initially started this recipe in hopes to make a huge batch of homemade raisin rosemary crisps. However, I was so pleased with how the first step turned out (these muffins) that I only sacrificed a few muffins to be turned to crisps. And the muffins? Well, they’ll make the perfect breakfast for in the morning 🙂 Knowing these flavors may be a little odd for my husband, he happily tried a mini muffin and LOVED it. He requested to take the rest to work with him this week. That, my friends, is a complete WIN in my book. 😉 Now I know he’ll love my pancakes!

You’ll also see that I’ve made 2 sizes: mini & large muffins. Each produce a different size cracker if you decide to further their destiny to the next step, but they are equally delicious 🙂 I’ll provide the points for each kind, which ever you prefer to make 😉 I will add that I prefer the large muffins for the crisps (they are easier to cut) but it’s all about personal preference!

crab & avocado zoodles

If you haven’t been making noodles out of veggies by now, well then, you’re completely missing out. This recipe came about as most of mine do: cleaning out the fridge! That’s where creativity shines and recipes like this are born.

Crunchy zoodles, creamy avocado, and that crab flavor makes a great side dish or a main meal. Only 3 main ingredients. That’s it! I love when it works out that way 😉 This dish is so fresh and light that it’s perfect for these summer months.

apple ring samoas (with peanut butter)

This is a slight naughtier version of my heathy apple rings. Although both equally delicious, sometimes that little devil on the shoulder shouts a lot louder than the good guy. Gosh, he’s so annoying. But as my journey gets farther and farther along, that voice is becoming distant. It seems there’s a new guy in the mix: the “best of both worlds” guy. I like him. We get along quite well 😉

So as I’m staring at my husbands Girl Scout cookie stash (the samoas!), the “best of both worlds” guy and I come up with this. It’s got the crunch of a cookie, and classic taste of a samoa. (I even added peanut butter! oh my!) However, these are a little messier, but that’s just more fun 🙂 Here’s another break down for you!

5 apple ring samoas (w/ pb): 4pp

Umm … yes. Plus, the apple rings are so much bigger. And 99% of the time, bigger is better. The other 1% are my hips; definitely bigger is not better here …
