Holy moly. Holy cannoli. I absolutely love a good cannoli, yet they’re so hard to find. Either they’re too sweet, stale, too “gritty” or bleh. I finally found a few places here in town that makes a great cannoli. They’re the mini ones, but that doesn’t matter. It gives me an excuses to have two. 😉 Continue reading “Open-Faced “Cannolis””

Cookie Dough Fro-Yo Pops
After seeing those Yasso Greek yogurt bars flying all around Instagram, I wanted one. I mean, cookie dough and Popsicles?! Hello ☺️. So every week I’d check my local grocers only to be let down once again. It seems there’s a ban on the cookie dough flavor around my part of the world. Only the mint and something else I can’t remember is available. I’m sure they’re just as good, but come on … I want cookie dough!
So, enough is enough. I decided to make my own. Plus, I knew exactly what would be going into them … and they’re one less point each 😉 Yep, a guilt free snack and dessert. I’m in! Makes me want to have a girls night and watch Dirty Dancing and eat popsicles. Ahhh, I love that movie.

Watermelon Salad
There’s nothing quite as refreshing as a cold, juicy, crisp watermelon in the heat of summer. I could eat half a watermelon as a meal and call it a day. Luckily, during the summer months, my appetite isn’t as monstrous. Usually something light and flavorful does the trick. So yep, watermelon is all I need. ☺️
But what happens when you put something delicious with something just as yummy? You get the most perfect summertime salad: Crisp watermelon. Fresh basil. Salty feta. Sweet balsamic. Yes, YEs, YES! Plus, it’s stunning. Look how beautiful it is! Who wouldn’t want to eat that?!
raw brownie balls
It’s apparent to me that I’m not a star baker. I’d love to blame it on my genes, but my mom is a great baker. My oven? Nope, don’t think so. I’m pretty sure it just me. So to solve all those problems, I’ve been venturing into the “raw” desserts. I made these around Christmas. Now, to cure that chocolate craving I have way to often, I whipped up a batch of these raw brownie balls. They can be balls, bars, or even cookies! (and an awesome “icecream” sandwich) … all variations pictured below 🙂 In this recipe, I added some protein powder, but it’s totally optional 🙂 Continue reading “raw brownie balls”
skinny banana “pudding”
At almost every family gathering, my aunt makes this ridiculous banana pudding that has me day dreaming of it after each function and counting down the days until our next one.
Quite frankly, I don’t have the patience or enough stretchy pants to make her version anytime I please. So what do I do? I make my own banana “pudding” … without the fattening pudding part. Ha. I’m thinking yogurt. Yes, yogurt! Protein packed, thick, creamy (greek) yogurt. It’s not the “pudding” that makes the dessert what it is, it’s the flavors. This skinny, single serving, healthier version, totally screams banana pudding.
Due to the high protein, this makes a great post workout snack. Now that’s something to look forward to during your last rep.
