It’s finally March and that means spring is right around the corner! Spring reminds me of warmer weather, flowers … and bee pollen. Yes, bee pollen. Oh, where to begin with all the benefits of this “life-giving dust”?

After moving to one of the top 3 worst cities for allergy sufferers almost 6 years ago (yay, Louisville!), I was immediately searching for those non-medicinal home remedies. One thing that kept showing up in every article was honey. LOCAL, raw honey. I use it daily; whether drizzled on toast, in oatmeal, smoothies, or taken with a spoon.

Lately, another version of this superfood has caught my attention. Bee pollen. Just read about it here! Amazing stuff. I came across some local pollen at a health food store; about $9 for the size shown below. I’m still finding different ways to use it, and so far, I’ve mixed it in smoothies, sprinkled it on oatmeal or toast, and made these. The idea came from Instagram where I follow @secretsquirrelfood (& you should too!). I knew I had to make them asap! And I’m so glad I did.

They’re a perfect, clean eating, sweet treat to cure even my biggest sweet tooth. Plus, it’s something I feel good about eating, hence, guilt-free! Did I just use the word “hence”? Continue reading “superfood banana pops”

Grocery shopping is probably one of my favorite things to do. Yep, I’m a foodie nerd. I’d rather browse around a grocery store than spend time in a mall. What’s even better? When my favorite food/produce is on sale! I recently scored blackberries at 77¢ per 6 ounce container and without thinking, I tossed 5 of those babies in my cart. Now, that’s why I love to grocery shop 🙂

I was hoping they would last me all week for breakfast, but by day 3, one container started to mold.

“Dang, how can I use all these up in one day?”

I could have easily made a cobbler, but there was a recipe I was meaning to try out and I had the perfect amount to do it! Another great thing about this recipe, you could use any berry you’d like: strawberries, peaches, blueberries, etc.

3 ingredients later and you’ve got a healthy, easy topping for that morning toast or to slather on a stack of pancakes. Actually, your PB&J just got a bit more sophisticated 😉

Look at those beautiful speckled bananas. There are so many things that could be made when bananas are at this glorious state; banana bread, smoothies, and of course, ICE CREAM!

I know the recipe for this is all over the internet, but I was recently asked by my good friend, Kara, if I had ever made banana ice cream and if I would share the recipe with her. Apparently her experience was disastrous, which I know a thing or two about 😉 So, I know there’s hope.

I played around with the idea one night and was really impressed by how creamy and ice cream-like it turned out to be. Plus, I’m one who loves when a recipe can have many, many variations and I’m so excited to explore them. Gosh, I love me some guilt free ice cream 😉 Oh, did I mention the base recipe is 0pp? ZERO. Love it.
