Skinny Irish Colcannon with Beer Battered Fillets
Something that’s been on my bucket list ever since my husband and I got back from Ireland a few years ago was going back during the fall … especially November. Seeing the trees change in one of may favorite cities sounds amazing. Cozying up in a corner of a pub, drinking a pint, and sharing fish and chips and a side of colcannon with my husband would be even better, especially after the hustle and bustle of Thanksgiving! If you’ve never heard of colcannon, its basically Irish mashed potatoes with cabbage or kale mixed in. It’s DELICIOUS.
To take a break from all the turkey, buttered mashed potatoes, rolls, cheesy-what not, and a mountain of pumpkin pie, it’s time to switch it up! Fish is a great transition away from the ham and turkey. Plus, GORTONS SEAFOOD always has a great selection of frozen seafood that brings a meal together quickly. Got an air fryer? Even better! Bringing it back to the recipe, I love making this dish when I want a touch of Ireland on my plate. I even lighten up the colcannon by using mashed cauliflower instead of potatoes. (I’ve had my fair share over Thanksgiving!) This meal is satisfying, delicious, and light. It’s great as a meal on its own, or pair it with a cold pint, maybe some chips to really drive it home.
Skinny Irish Colcannon with Beer Battered Fillets

Ingredients:
• 1 medium head of caulifower
• 1/2 small head of green cabbage, chopped
• 4 scallions
• 1 bag of GORTONS BEER BATTERED FILLETS
• salt, pepper, garlic powder
Directions:
• Prepare the cauliflower removing the core and leaves, and placing the florets in a microwave safe dish with a little water. Cover and microwave for 3-4 minutes.
• Prepare the Beer Battered Fillets according to the package directions, or place them in an air fryer and cook for 8-10 min at 400°.
• Meanwhile, add chopped cabbage and the green and light green parts of the scallion to a skillet. Cook covered for 5 minutes – stirring often and adding small splashes of water if needed. Add salt and pepper to taste. Set aside.
• Once the cauliflower is cooked, add the florets to a food processor with salt, pepper, and garlic powder to taste. Process the cauliflower until it resembles mashed potatoes. Add the mashed cauliflower to the skillet with the cabbage and scallions and mix well.
• To Serve: Scoop a serving of the skinny colcannon into a bowl and top it with 2 beer battered fillets. Garnish with fresh parsley or a drizzle of melted parsley butter (melted butter+fresh parsley).
