Fall Harvest Overnight Oats
I know I just recently posted a “Fall Harvest” recipe, but I’m obsessed with these flavors! Apples, carrots, raisins, cinnamon … they’re a winning combo.
The recipe I posted last week were these cookies which I’m pretty sure are gone. Apparently I can’t have cookies in the house! (ha!) Luckily, this overnight oatmeal recipe will give me my seasonal fix early in the day and keep me full until lunch.
The first morning, I enjoyed them cold (as overnight oats are meant to be ate) with a drizzle of almond butter. The next day, I warmed them up and poured some maple syrup on top. WOW. Warm oats > cold oats for sure. It was VERY reminiscent of maple and brown sugar oatmeal. You know, the kind that comes in the brown packet. (Which was always a fave growing up.) However, this recipe has no added sugar but just the right amount of sweetness.
As always, if more sweetness is desired, I recommend a drizzle of maple syrup or honey on top right before serving. Sooooooo good.
Fall Harvest Overnight Oats

Ingredients:
• 1 cup quick oats
• 1 tbsp ground flax seed
• 1/4 cup chia seeds
• 1/2 tbsp cinnamon
• 1/4 tsp sea salt
• 1 carrot, grated
• 1 small apple of a sweet variety (Fuji, honey crisp, etc), cored and diced
• 1 -1oz box of raisins
• 4 cups unsweetened vanilla almond milk (or milk of choice), divided.
Additional toppings: nuts, maple syrup, honey, almond butter, etc.
Directions:
• In a large bowl toss all the dry ingredients together (all except the milk).
• Divide the oat mixture into 4 equal servings into separate jars (with lids). I used these Weck Jars.
• Pour 1 cup of milk into each jar, put the lid on and give it a good shake. Place the jars in the fridge and allow to sit overnight.
• Enjoy the next morning cold or warmed up! Add some extra sweetness with a drizzle of maple syrup, honey, or almond butter.
