Lazy Girls Wonton Soup
With it being continuous rain since last weekend, we’ve finally gotten a teeny break in the temperature. It actually FEELS like fall! And besides fall being pumpkin, hayride, and of course, sweater season, it’s also SOUP SEASON!
I couldn’t help but want soup stat. Yep, it’s time to break out the dutch ovens, slow cookers, soup pots, and whatever else you use to make a big batch of liquid warmth. Well, maybe not a big batch since the cold front isn’t going to last too long.
This is where Lazy Girls Wonton Soup comes in. Having a warm, single-serving bowl of goodness one day, then salad and ice cream the next … because Mother Nature really doesn’t have any idea on what she’s doing. Either way, I’ll take any chance I can get to make a bowl of soup.
Lazy Girls Wonton Soup

Ingredients:
• 2 cups chicken broth (low/no sodium)
• 1 tsp minced garlic
• 1 tsp minced ginger
• 1-2 tbsp coconut aminos (or low sodium soy sauce)
• 1/4 tsp sea salt (more or less to taste)
• 1 button mushroom, sliced
• 1 scallion, sliced (reserve some green for garnish)
• small handful of spinach (optional)
• 7 pre-made wontons (potstickers, gyoza) (I used Trader Joes Chicken & Veggie Gyozas)
• sesame seeds, for garnish
Directions:
• In a large sauce pan, bring everything to a heavy simmer. Allow to cook for 5 minutes or until wontons are hot throughout.
• Taste broth and adjust seasonings if needed.
• Pour soup into a bowl and top with scallion greens and sesame seeds.
• Enjoy!
