I know it’s been a while since my last recipe post, but I’ve been busy!

In July, I did my first Whole30. That’s right. I’m considered a Whole30-er/Whole30 Alumni! Completing this challenge has been a life changer as well as a much needed eye-opener. So why am I telling you all this? Well, today’s recipe came from my Whole30 days. I needed a different way to enjoy eggs, especially in the morning, and this was made many of times!

Shaun requested french toast a few times during my reset and gosh darn it, I was starting to miss having a few slices of french toast with him. I wanted that cinnamony, sweet taste.

As I was whisking the egg mixture to soak the bread in, I had a thought. “Why don’t I try and scramble this eggy mix?” So I did!

Let’s just say, Whole30, Paleo, Weight Watchers, Low Carb, Keto … this recipe is perfect for them all! Plus, you can scramble them or make an omelette! Drizzle some maple syrup on top to take it to the next level. Who needs bread anyway? 😉

Yields: 1 serving
Macros per Serving: 164 calories
10g Fat, 7g Carbs, 4g Fiber, 13g Protein

Ingredients:

• 2 eggs
• ¼-½ tsp cinnamon (to your liking)
• 1/8 tsp vanilla, optional
• pinch of sea salt
• maple syrup, optional for topping

Directions:

• Whisk together the eggs, cinnamon, vanilla (if using), and sea salt.

• Pour into a preheated skillet and cook for a few minutes, scrambling the eggs until set.

• Serve with a drizzle of maple syrup if desired.

• Enjoy!
