An entire meal for 1sp? 1?! This isn’t a typo! This version of jambalaya is lightened up by using cauliflower rice and using only 1 protein: Gorton’s Seafood Grilled Fillets.
Jambalaya is straight comfort food for me. It’s not because I’ve spent weeks strolling up and down Bourbon St. or even considered New Orleans somewhere I’d like to vacation. Jambalaya is comfort food because of the simple memory of my husband and I making it on cool, fall evenings. Granted, we used the boxed kind, with cheese, and served it with a whole box of garlic toast, but it was delicious … and a bajillion smart points.
Now a days, when I want that comforting bowl, I make my own using cauliflower rice, seasoning and quick-cook grilled fillets. Gorton’s Seafood offers several varieties of sustainably sourced seafood products that I love incorporating into my meals. This meal is best with the Garlic Butter Alaskan Pollock but it’s obviously great with the Cajun Alaskan Pollock. They’re so easy and full of flavor. You can’t go wrong!
Gorton’s Fillet’s are a perfect way to add protein and flavor to any dish. The smart points and calories are very low, I could have a box of garlic toast if I wanted … I’m not, I’m just saying I could. Haha! Even though each serving is only 1 Smart Point, it’s very filling; something I look for in a lunch or dinner option. Serving it with a few slices of toasted baguette is my favorite! There’s something about scooping up all that flavor that’s just so comforting.
Skinny Cajun Seafood Jambalaya

Yields: 2 Servings
Smart Points per Serving: 1sp
Macros per Serving: 244 calories
4g Fat, 35g Carbs, 22g Protein
Ingredients:
• 1 ½ cup diced bell peppers (1 large or 2 small: green & yellow)
• 1 medium onion, diced
• 1 cloved of garlic, minced
• 1 bag (12oz) frozen cauliflower rice
• 1 can crushed/diced tomatoes (no salt added)
• 2 tbsp low/no sodium cajun/jambalaya seasoning (I used Simply Organic)
• Several dashes of hot sauce (optional)
• 1 package of Gorton’s Garlic Butter Grilled Fillets
Directions:
• In a skillet on medium heat, spray with nonstick spray and add the onion and peppers.
• Cook for 5-8 minutes until onions are just translucent and the peppers are starting to soften.
• Meanwhile, pour crushed tomatoes into a bowl and add cajun/jambalaya seasoning. Mix well. Add hot sauce if using and season with salt to taste (if needed).
• Add minced garlic to the onion/peppers and cook for 30 seconds or until fragrant.
• Add the cauliflower rice. Mix everything together and cook for a few minutes to soften the cauliflower.
• Pour in the crushed tomatoes and stir to combine.
• Place the 2 Gorton’s Garlic Butter Pollock fillets on top of the rice mixture.
• Cover and cook for 10 minutes or until fillets are heated through.
• Garnish with scallions and additional hot sauce if desired.
• Enjoy!
