Bell Pepper Sandwich. No buns needed.
I feel kind of silly posting about this meal. It’s not really a recipe, more of an idea; another reason I love instagram. I saw this girl make a sandwich and my life has been forever changed. Well, not really. But lunch time sure has!
Basically, load up your typical sandwich but sub out the buns/bread for some tasty, crunchy bell peppers. No one likes soggy bread anyway. Or maybe you do?? And that’s cool, too.
I love this low carb meal idea, but not as much as I love pairing it will some carby pretzels. It’s all about balance right? 🙂
Bell Pepper Sandwich
• 1 Bell Pepper
• Your favorite sandwich fillings*
*I like Boars Head Black Forest Turkey, spinach, cucumber, spicy brown mustard (1 smartpoint total)
*I like Boars Head Black Forest Turkey, uncured bacon, avocado, spinach, cucumber, spicy brown mustard (4 smart points total)
• Cut the top and bottom off of the bell pepper.
• Remove seeds.
• Cut the pepper in half.
• Place desired fillings between the two pieces.
