Sweet Potatoes. I could live on them. They’re such a versatile root vegetable that is AMAZING when cooked.
When I’m in a hurry, I’ll throw a few in my Instant Pot and 15 minutes later, I’d have a few taters for the week. I love to have them for breakfast … loaded! There’s just nothing better than topping a steamy sweet potato with nut butter and crunchy bits. Ahhh, it’s the little things.
However, when I want to deepen that sweet flavor, my sweet potatoes will get a nice roast in the oven. Diced, sliced, wedged, or whole, there’s just something about a roasted sweet potato … or any potato for that matter.
Today, I’m sharing one of my favorite ways to spruce them up. They’re sweet enough for breakfast and even for dessert (I would even add some vanilla ice cream on top with a few squares of baked pie crust pieces.) OH, YUM!
The little squares get a nice coating of vanilla, cinnamon, nutmeg, and love. Lots and lots of love. Such a perfect combo.
Vanilla Spiced Roasted Sweet Potatoes
Ingredients:
2 sweet potatoes (18oz), diced
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp salt
1 tbsp pure vanilla extract
Directions:
• Preheat oven to 400° F.
• Place diced sweet potatoes in a large bowl.
• In a small bowl, mix together the other ingredients.
• Pour vanilla mixture over potatoes and toss to coat.
• Put potatoes on a baking sheet and roast for 20 minutes (tossing halfway through)
• Enjoy!
