Greek Yogurt Cinnamon Rolls … with vanilla bean icing!

Mmmm … there’s nothing like the smell of freshly baked cinnamon rolls on a Sunday morning. I woke up early because I couldn’t wait to get these in the oven. Does that happen to anyone else? Coffee usually gets me out of bed too. 🙂

I’ve been wanting to make a healthier cinnamon roll for quite some time. I also didn’t want to get up at 4 am for the dough to rise just so I could have breakfast by 9. If I were having brunch, then that wouldn’t be a problem … not the case though! This morning, I used a yeast-free dough which resulted in me enjoying 2 of these in less than an hour (from start to finish!)

The dough I used was one that I normally made pizza or calzones with. It’s only 2 ingredients and packed with protein. I couldn’t wait to try it with this recipe. And in my opinion, it worked. 🙂 Of course, the dough doesn’t rise like your typical cinnamon roll, but honestly, I didn’t care! Pair it with some fruit and a big cup of coffee and your Sunday is off to a fabulous and healthier start.

Greek Yogurt Cinnamon Rolls

  • Servings: 8 rolls at 4 smart points each

img_8044Ingredients:

Cinnamon Rolls:
1 cup self rising flour, plus 2 tbsp, divided.
1 cup 0% greek yogurt
1 tbsp butter
1 ½ tsp cinnamon
1 ½ tbsp coconut sugar (or regular sugar)

Vanilla Bean Icing:
1/4 cup powdered sugar
1/2 tbsp milk of choice
1/8 tsp vanilla bean paste (or vanilla extract)

Directions:

• Preheat oven to 350° F and spray an 8×8 pan with nonstick spray.
• In a stand mixer fit with the dough hook attachment, add 1 cup of flour and the greek yogurt. Mix until a dough ball forms (about 3-5 minutes). (You could also mix the dough in a bowl and knead with your hands for 5-8 minutes; may need to add flour which will change point value.)
• While the dough is mixing, melt butter in a small bowl. Combine sugar and cinnamon in another small bowl.
• When dough is done, sprinkle 1 tbsp of flour on a clean surface and pour out dough.
• Sprinkle remaining tbsp of flour on top and form into a ball, then a small rectangle.
• Place a sheet of plastic wrap over dough and use a rolling pin to roll out a rectangle. (about 12×8)
• Brush melted butter onto the dough, then sprinkle on the cinnamon sugar mixture.
• Roll up the rolls (like you would a jelly roll) and cut into 8 equal pieces.
• Place each piece in the pan and press down gently to make them fatter. (Rolls will not rise much).
• Bake for 30 minutes.
• While the rolls are baking, make the icing by mixing all ingredients in a small bowl until a thick, pourable glaze is made.
• Allow rolls to cool slightly before adding icing.
• Enjoy!
