Lemony Coconut Bliss Balls
It’s been bone chilling cold outside this past week. I’m talking about the kind of cold that feels like it burns any part of your skin that is exposed. Now I know it could be much worse and it IS much worse in other parts of the country, but it’s hard to get use to such a chill when the weather can’t make up its mind. The high was 24° yesterday, but a few days from now it will be 65° … and rain. Nothing but rain.
While I can’t do anything about the weather, I can pretend it will be anything but cold and gloomy during snack time.
Lemons are spring, summer, and bright like the sun. Ah, the sun. Coconut is tropical, warm weather, beaches and tan lines. Yes, give me all that and more rolled into a ball! These two flavors together makes me so … happy! I also love how these little snacks are easy to make. Just throw (almost) everything into a blender or food processor and you’ll have a healthy, raw, no bake snack that’ll have you dreaming of warmer days.
Lemony Coconut Bliss Balls
Ingredients:
• 1 cup cashews
• 1 cup pitted dates
• Zest of one medium lemon
• 1 tsp fresh lemon juice
• 1 tsp vanilla
• Pinch of salt
• 1 scoop Vital Protein Collagen Peptides* (optional, could use protein powder)
• 2 tbsp flaked coconut, unsweetened (divided)
Directions:
• In a blender or food processor, combine 1 tbsp of coconut with the rest of the ingredients.
• Blend until everything is combined and holds together when pinched.
• Using a small cookie scoop (this ensures they are the same size), scoop a ball into your hands and carefully pinch/roll into a ball.
• Lighty press each ball into the remaining 1 tbsp of coconut and roll into the hands again (to ensure the coconut sticks).
• Enjoy!
