Vacation is a few days away. (Yay!) I’m kick starting my countdown with a bowl of “vacation flavored” oats. Or at least that’s what it tastes like …
Ever since I made caramelized or “fried” bananas, I’ve been wanting to put them on EVERYTHING! Waffles, ice cream, you name it. While making some oatmeal the other morning, I thought to myself, “Self, fry up some of those babies and put them on your oats!” “Duh, Karen, you’re a genius.” “Ah, thank you, self.”
I then turned my regular oats into coconut oats by using coconut milk and adding some desicated coconut to the mix. I mean, coconut and banana are just vacation flavors that one could have anytime. Ahh, Bora Bora … Ok, sorry. Back to the oats.
While the oatmeal is cooking, that’s the time to caramelized some banana! Heat up some coconut oil and coconut sugar (or brown sugar), add sliced banana and hear that beautiful sizzle sound.
Once one side is “fried” and golden brown, flip and finish them off on the other side. Top the oatmeal with the bananas and some walnuts and coconut for good measure. Play some tropical music, or listen to ocean waves on pandora and enjoy your exotic breakfast … in your kitchen. Hey. I’ll take what I can get. 🙂
Coconut Oatmeal with Caramelized Bananas
1 cup coconut milk (beverage)
1/2 cup quick cooking oats
1 tbsp chia seeds
1 tbsp shredded unsweetened coconut
1 tbsp unsweetened apple sauce (for sweetness)
1/2 banana, sliced
1 tsp coconut oil
1 tsp coconut sugar (or brown sugar)
1/4 tsp unsweetened shredded coconut
1/4 oz walnuts
-In a small sauce pan, heat coconut milk and apple sauce until hot.
-Stir in oats, chia seeds and coconut.
-Turn heat to low and allow to cook and thicken (about 1-2 minutes).
-Pour into a bowl, set aside.
-In a small skillet on med/high heat, add coconut oil and sugar.
-When the coconut oil/sugar is hot and melted, add the sliced banana.
-Fry until golden brown and caramelized.
-Flip the banana and fry the other side.
-Add caramlized bananas to the bowl of oatmeal.
-Add additional coconut and walnuts if desired.
