The only thing that could make this better would be a big ‘ol scoop of vanilla bean ice cream. But honestly, it doesn’t need it … Unless you have dessert on the brain (which I always do). ☺️
But this is for breakfast today, not dessert. For the record, I’m not the greatest with open flames in the kitchen. With that said, there’s no rum used in this recipe. However, you could easily use rum extract for that flavor. If your a pro with lighting things on fire, have at it! Either way, you’ll have a delicious, fun, and decadent breakfast on the table in the amount of time it takes to cook a waffle. (Or make pancakes!)
bananas foster waffle (pancakes):
servings: 1 waffle or 2 pancakes
Points Per Serving: 7pp
1/3C pancake/waffle mix (I used Hodgsonmill Buckwheat mix)
1T quick oats
1t chia seeds
1/2C unsweetened vanilla almond milk (or milk of choice)
splash of pure vanilla extract
bananas foster topping:
1 banana, sliced
1t coconut oil
1t coconut sugar or brown sugar
dash of cinnamon
splash of rum extract (optional)
•Turn on the waffle maker or griddle.
•In a bowl, mix all pancake ingredients and let sit for a minute or 2.
•When the waffle maker is ready, pour the mix in and let it do its thing or pour batter onto a griddle to make 2 pancakes.
•While the batter is cooking, heat a small skillet to medium heat.
•Add coconut oil, sugar and cinnamon.
•When coconut oil has melted, add the sliced banana.
•Sautée/fry the banana until it’s hot and gooey.
•Pour the bananas over the finished waffle/pancakes.
