It’s apparent to me that I’m not a star baker. I’d love to blame it on my genes, but my mom is a great baker. My oven? Nope, don’t think so. I’m pretty sure it just me. So to solve all those problems, I’ve been venturing into the “raw” desserts. I made these around Christmas. Now, to cure that chocolate craving I have way to often, I whipped up a batch of these raw brownie balls. They can be balls, bars, or even cookies! (and an awesome “icecream” sandwich) … all variations pictured below 🙂 In this recipe, I added some protein powder, but it’s totally optional 🙂
raw brownie balls
Yields 15 balls/bars/cookies
Points Per Piece: 1pp each or 2/3pp
40g dates (about 5 medium)
1C rolled oats
2T dark cacao powder (I use Hersheys Special Dark)
5g raw honey
1/8C almond butter (unsalted. If using salted, omit salt)
1/2 ripe banana, cut into pieces
1t unsw vanilla almond milk
(for protein balls: add 16g chocolate protein powder & additional 1T milk)
•Combine all ingredients into a food processor.
•Pulse until combined
*If too dry, add a little more milk at a time. If too wet, add more oats.
•Divide dough into 15 equal sizes.
•Then, roll into balls.
−If making cookies, flatten each ball in between wax paper.
−−If making bars, press into a small dish and cut into 15 pieces.
•Place in the freezer for an hour until firm. Then keep in the fridge and eat when that craving hits! 😛
To make the “ice-cream” sandwich: Put 2T whipped topping between 2 cookies (4pp!) 🙂
