It’s only fitting to have this post today since it is National Nacho Day! And of course, I’m not one to ignore such days. 😛
This is, yet again, another quick and super simple meal that will please a crowd. Yes! Even a football party crowd. For all you weight watchers and carb nixers, you won’t even miss the chips! Promise!
This recipe is vegetarian (as I use refried beans) but feel free to add shredded chicken or beef (in addition to the beans!) for added protein and to please those carnivores in your household.
bell pepper nachos:
Points Per Serving: 6pp+ (depends on the toppings)
1 large bell pepper (orange or yellow)
1/2C refried beans (I love refried black beans. Mmm)
1/4C cheddar cheese, shredded
avocado, black olives, lettuce, scallions
greek yogurt/sour cream
hot sauce, salsa
•Start by preheating the oven to 400F.
•Line a baking sheet with nonstick foil.
•Cut the bell pepper into bite size pieces (discarding the seeds and stem).
•Spoon a little refried beans onto each bell pepper.
(then, if desired, add your meat of choice)
•Place the bell peppers onto the foil close together and sprinkle on the cheese.
•Throw that baby in the oven for 12-15min.
•When the cheese is all melty, scrape your “nachos” onto a plate and add your favorite nacho toppings.
•Enjoy with a fork or get all in there with your fingers. I won’t judge. 🙂
