Say that 4x fast …
My two loves come together in this dual layer dessert. I’ve taken my banana bread recipe and hid a nice brownie layer underneath … oh sneaky, sneaky 🙂
These bars are rich, thick, and has a nice fudge-y layer. Only one is needed to satisfy that dessert bar craving.
brownie bottom banana bread bars:
Yeilds 16 bars
Serving Size: 1 bar
Points Per Serving: 4pp
brownie layer:
1 box Trader Joe’s Reduced Guilt Brownie Mix
2/3C non fat greek yogurt
1t instant coffee (optional)
banana bread layer:
basic banana bread
2T PB2 (optional)
20g dark chocolate chips
⋅Preheat the oven to 350°F
⋅In a medium bowl (or stand mixer) combine brownie mix, greek yogurt, & instant coffee. (I started using a spoon and bowl but it was taking forever to come together, so I tossed it in my stand mixer and let it do all the work)
⋅Layer brownie mixture in the bottom of a sprayed 9×13 baking dish (batter will be VERY thick)
⋅Next, prepare banana bread mixture until just combined; be sure to not over mix.(I also added 2T pb2 for a peanut butter flavor).
⋅Pour onto brownie batter.
⋅Top with chocolate chips if desired and bake for 25-28min or until toothpick comes out clean.
Look where the brownie meets the banana bread. Oh, my 🙂
⋅Let cool and cut into 16 bars. ←(The hardest part … ever!)
Store in the fridge. (they are soooo good cold, too!) 🙂
Buuuut the best way to enjoy these are to pop them in the microwave for :20 and they’re all fudgy and gooey. 😛
Serve with a tall glass of cold almond milk 🙂 Mmmm
