What if I told you, “Hey there. You can eat 5 doughnuts with glaze for only 7pp … ”
You’d probably look at me like I was some crazy person. However, I’m not one to joke around when it comes to doughnuts. So, what’s the deal?
Obviously baking doughnuts is a sure way to lower points. No frying = no additional fat. And remember one of my kitchen intimidations? Yeast? Ugh, I really need to give it a whirl, but not today.
These are yeast-free, done in 7 minutes, healthy, cake-like doughnuts. Secret?
Pancake Mix.
You have some on hand. All you need is a doughnut pan. A great kitchen essential to help switch things up 😉 Now, let’s have our DOUGHNUTS and eat them too! They are great by themselves, but they are even greater with a glaze … which is totally optional of course 😉 (& P.S. … this is another great recipe to have endless combos. We get creative with pancakes, so why not make them in doughnut form?) 🙂
easy baked doughnuts:
Yields 5 doughnuts
Serving Size: 1 (yes, you can have all 5!)
Points Per Serving: 7pp
(This recipe is for the doughnuts pictured: chocolate protein doughnuts with peanut butter glaze– If not using protein powder, omit and add 1t cocoa powder and subtract 1pp)

1/3 pancake mix (I always use Hodgson Mills Buckwheat Pancake mix)
1T quick oats
1t chia seeds
1/2 banana, melted (or mashed well)
14g chocolate protein powder
1/2C unsweetened almond milk
1 serving of the peanut butter syrup/glaze
1t cocao nibs (optional- add 1pp)
Preheat oven to 350ºF
⋅In a bowl, mix together pancake mix, oats, chia seeds, banana, protein powder, and milk.
⋅Pour the contents into a ziplock bag, seal, and cut the bottom corner (making a piping bag!)
⋅In a sprayed doughnut pan, pipe in pancake filling 1/2 to 3/4 full in 5 doughnut spots.
⋅Bake for 7-8min.
⋅Remove from the oven and let cool in the pan for 2 minutes, then turning them out onto a cooling rack.
Dip or spoon peanut butter syrup/glaze onto each doughnut & top with cocao nibs if desired.
Woohoo! We can have doughnuts again!

blueberry doughnuts with vanilla protein glaze:
Yields 5 doughnuts
Serving Size: 1
Points Per Serving: 6pp
1/3C pancake mix (again, Hodgson Mills buckwheat!)
1T quick oats
1t chia seeds
1/2 melted banana
1/2C unsweetened vanilla almond milk
1/2C blueberries
vanilla protein glaze:
1 scoop vanilla protein powder
1/4C unsweetened almond milk
1t non fat greek yogurt
splash of vanilla extract.
Add blueberries to doughnut mixture (and if you have some teeny tiny ones, sprinkle a few blueberries in the bottom of the doughnut pan before pouring on the mix) and bake the same as above. Top with glaze. Enjoy!

Is this a just add water pancake mix? I’m a Canadian and we don’t have that brand.. Maybe you could post the nutritional info so I can try to compare?

You can use any pancake mix you’d like 🙂 that brand is just my favorite. It doesn’t even have to be the “just add water” because I believe the directions on my actual box has me adding oil and eggs, but no need for that. I use the chia seeds and banana 🙂 Hope this helps!
