With the weather warming up, I’ll be using a lot of coconut in my dishes. It’s a light, tropical taste that packs big flavor with minimal points (if used the right way 😉 ). I just recently made skinny almond joy bars, and as I knew it would, they didn’t last long. I may have a bar or two left, but they probably wouldn’t be the best breakfast choice. So, pancakes it is! Chocolate (protein!) pancakes topped with coconut maple cream, shredded coconut & sliced almonds … I know, right?! Candy Pancakes for breakfast!!
almond joy pancakes:
Yeilds 2 large pancakes
Servings: 1
Points Per Serving: 7pp
1/3C pancake mix (I use Hodgson Mill Buckwheat Pancake Mix)
1T oats
1t chia seeds
1/2C unsweetened vanilla almond milk
1/2 banana, (melted or mashed well)
14g chocolate protein powder (I use Designer Whey)
1/2t shredded coconut
1T sliced almonds
1 serving of the coconut maple cream
⋅In a medium sized bowl: mix pancake mix, oats, chia seeds, almond milk, chocolate protein powder, & melted banana.
⋅On a griddle, divide mixture into 2 pancakes (or 4 smaller ones 🙂 )
⋅When finished, top with coconut maple cream, shredded coconut, and sliced almonds.
