There’s something special about an almond joy. The chocolate and coconut can easily transport me to a topical place. Sometimes I feel those commercials prove true. You know the ones; where someone tears open that blue wrapper, and along with the chocolate and coconut, a palm tree appears. Yep, that’s me; eyes closed, sitting in my bathroom with my feet in the tub, inhaling an almond joy. Yet, in my head, I’m at the beach with my feet in the water. I just hope my husband doesn’t walk in on me and wonder what I’m doing … but hey, maybe one day he’ll join me. If I’m willing to share. I do love him, but he should bring his own almond joy just in case. 😉

Since my jeans won’t let me inhale almond joys like I used to, I’ve decided to come up with my own version. They’re healthier, too! Oh, and the best part? NO BAKE! It’s 85° outside, turn that oven off! 🙂

Each bar is only 2pp and satisfies that chewy, chocolate and coconutty craving. 100%. Maybe my husband will join me on the side of the tub with a plate full of these.

skinny almond joy bars:
Yields 12 bars
Serving Size: 1 bar
Points Per Serving: 2pp

1C coconut, shredded
1/4C Blue Diamond Coconut Almond Milk*
2T + 1/8t coconut oil (divided)
1/2t vanilla extract
1/8t salt
1T slice almonds
30g chocolate chips, melted (I use Guittard Extra Dark, but you could use milk chocolate)

(*you could also use canned lite coconut milk for the same amount of pro points, add sweetener if needed, etc.)

⋅In a food processor, combine coconut, almond milk, 2T coconut oil, vanilla extract, and salt.

⋅Press into a 4×6 baking dish (could use 8X8 for really thin bars or double the recipe for a 9×13).
⋅Place in the fridge to chill while you melt the chocolate.

⋅Melt your chocolate in a microwave safe bowl with 1/8t coconut oil.
⋅Bring coconut bars out of the fridge and evenly pour out chocolate onto the top. Gently spread out with a spatula. (chocolate layer will be thin).
⋅Add sliced almonds and press them into the chocolate. Most likely you’ll have chocolate to lick off of your fingers afterwards. Oh, darn 😉

Let them hang out in the fridge for an hour or freezer for 20 minutes to firm up. Cut into 12 bars and serve. Store bars in the fridge.
