This is the perfect snack. And by perfect, I mean healthy, delicious, easy, and healthy. Oh, did I say that twice? … Because it’s true!!
This snack gives a plentiful punch of protein (8g!), fiber (almost 9g!), omega 3’s, & antioxidants; sophisticated enough for any adult and fun for the kiddos. WIN, WIN! These healthy apple rings would be great for breakfast as well! … but today, they were dessert! 🙂
healthy apple rings:
Servings: 1
Serving Size: 5 apple rings
Points Per Serving: 4pp
1 large apple (I use pink lady, honeycrisp, etc)
2T PB2 (prepared)
1T whole grain quick oats
1T sliced almonds
1T walnuts
12g dark chocolate chips (I use Guittard extra dark chocolate)
- In a small bowl, add oats to prepared PB2 and mix.
- Using an apple corer, carefully core the apple and discard the center.
- Slice the apple 6 times. You’ll have the bottom, top and 5 inside pieces. Feel free to eat the ends 🙂
- Top the apple slices with the peanut butter/oat mixture. Then evenly distribute the chocolate and nuts on top of the peanut butter. And that’s it!
I almost felt like I was eating a cookie; crisp, creamy, nutty, chocolatey. Mmm. Perfection.
Feel free to come up with different variations! I had s’more apple rings and they were delicious!! Just top with marshmallow creme, chocolate, and crushed graham cracker 🙂
