I surrender, no longer in denial … I’m an addict. A full-blown, could-eat-it-everyday addict.
I’m addicted to s’mores. I would probably bleed chocolate and marshmallow if a vampire found it’s way to my jugular. What? Vampires? Good grief. Anyway, back to my s’more’s obsession. Breakfast, Lunch, Dinner, Snack, Dessert. Yes, ANYTIME! … and today, it’s breakfast 🙂
Serving Size: 2 pancakes
Points Per Serving: 7pp
1/3C buckwheat pancake mix (I use hodgson mill but you could use your favorite -keep in mind ww points could change)
1/2C unsweetened vanilla almond milk (more or less for consistency)
1t chia seeds
1T quick oats
15g (1-2T dark chocolate chips)
2T marshmallow fluff
chocolate fudge sauce or Walden Farms Chocolate Syrup
*in my original recipe, I had mini marshmallows added to the batter. However, being the super-sneaky sugar balls that they are, they disappeared in the pancake. No evidence of existing. They did leave my griddle a big sticky mess though. So … they’re not needed 🙂 *
- In a small bowl, combine pancake mix, chia seeds, quick oats, and almond milk. (protein powder a good option to add also)
- Mix in the chocolate chips & cook the pancakes like pancakes loved to be cooked 🙂
- When finished, top each pancake with 1T of marshmallow fluff. Stack ’em and drizzle on some chocolate sauce.
