Who has leftover egg roll wrappers?? I do!
I could have made more s’more egg rolls, but something savory was in the stars for the rest of them 🙂 This lasagna is easy to throw together (like most of my meals) and it’s only 5pp for a serving! All thanks to using egg roll wrappers instead of lasagna noodles and making your own (super simple) tomato sauce. Awesome!
skinny turkey & spinach lasagna:
Servings: 4
Serving Size: 1/4 of the lasagna
Points Per Serving: 5pp
3 egg roll wrappers, quartered
3/4lb lean ground turkey
2 laughing cow garlic & herb wedges
1/4C fat free ricotta cheese
2oz Trader Joe’s Lite Mozzarella
2 handfuls of spinach
15oz can of crushed tomatoes
basil
oregano
garlic salt
s&p to taste
Preheat oven to 375F.
In a skillet, brown the turkey and drain. Mix in the cheese wedges and ricotta. Salt & pepper to taste. Set aside.
In a sauce pan, warm up the crushed tomatoes and add basil, oregano & garlic salt to taste. (yes, that’s all it is!) Set aside.
To start assembly:
In a 9×9 baking dish, lay sauce to prevent sticking. Then add egg roll wrappers, spinach, 1/2 of the turkey/cheese mixture, a sprinkle of mozzarella. Repeat.
On the 3rd layer: sauce, the last of the egg roll wrappers, more sauce and all of the mozzarella cheese.
Bake for 20 min and broil for a few minutes if desired.
Serve with a side salad or mashed cauliflower. Woohoo for lighter, tasty, italian fare! 🙂
Looks like a great recipe to experiment with a few times. Could turn out to yield some interesting results.

Hi! I am tempted to try this… how much oregano and basil did you use? fresh or dried?

I used dried herbs. And it depends on your taste. Just a pinch or 1/8t should be ok 🙂 my tomato sauce had basil already in it, so it’s a personal preference. Taste as you go 😉
