Today is my best friends birthday and one thing comes to mind when I think of her: Chocolate & peanut butter.  This girl loooves her Reese cups. So, it’s only fair that I make something delicious for her big day (even though she’s 2 hours away and I’m the only one that’s going to enjoy them. Sorry, Judd 😉 Happy Birthday anyway xoxo)

Great timing as well because I’ve also been wanting to play around with a butter-less graham cracker crust. Found a few online and did some tweaking here and there … and tada! I’m satisfied with the results; satisfied enough that I’m ready to make it on a bigger scale. Keep an eye out pie lovers. Good things are happening here … 🙂

I’ll start by posting the recipe for the graham cracker crust, then we’ll get a little crazy and add some chocolate & peanut butter into the mix.


 

easy graham cracker crust:
Servings: 1
Points Per Serving: 11pp

2/3C low fat graham cracker crumbs (I made my own by grinding up graham crackers)
1T light brown sugar
1T + 1t fat free greek yogurt

Preheat oven to 350F.

Combine ingredients in a medium size bowl until well blended.

Press into desired pan and bake for 5-7min or until golden brown.

If serving it as a whole pie to serve out slices, let it cool in pie pan. If making individual pies, let cool in the pie pan for a few minutes then carefully remove, letting them finish cooling on a cooling rack.

Serving Size: 3 pies
Points Per Serving: 4pp
(& if you can eat just one, it’s 1pp 😉 )

easy graham cracker crust made into 9 mini muffin cups
2T PB2, prepared
2-3T chocolate sauce

After the pie crust cools, evenly distribute a little peanut butter into the cups. Then, drizzle on the chocolate sauce.

Place the mini pies in a container and let them hang out in the fridge for a few hours. This allows the chocolate to firm up and get all sexy-like 😉

Finally, after all the patience you’ve endured, it’s time to reward yourself.
… Gosh, I love birthdays …
