I woke up this morning craving cake. CAKE.
This is nothing unusual for me. Cake for breakfast, lunch, and dinner would be ideal. However, in the real world, that would be frowned upon β¦ but who cares? Cake for breakfast? Absolutely! Make it into an oatmeal and no one will even question it.
german chocolate cake oatmeal:
Servings: 1
Points Per Serving: 7pp
1/4C quick oats, uncooked
1T chia seeds
1 scoop protein powder (optional)
1/2t unsweetened cocoa powder
1/4t coconut extract
a few drops of stevia (or your favorite sweetener)
1T finely shredded coconut (divided: 2t, 1t)
1C unsweetened vanilla almond milk (or 2/3C for thick oatmeal)
1T chopped pecans
1T chocolate sauce (optional, but recommended π )
In a medium sized bowl, combine oats, chia seeds, protein powder, cocoa powder, and 2t shredded coconut.
Mix well then add almond milk, coconut extract, and stevia. (In the photo, I combined them all at once and it took a minute for them to incorporate. So, by mixing the dry first, that would be awesome)
Microwave for 1:30 or until desired doneness is reached.
Top with 1t shredded coconut and chopped pecans.
(I also had some chocolate sauce left over in the fridge, so on it went π )
Which one would you rather eat? The chocolate drizzled one? Yeah, I thought so β€
