It’s no secret I love a good pancake. Throw in some of my favs (coconut, peanut butter, banana) and my day is golden. At least it’s starting in the right direction. The pancake batter is very, very similar to the Protein pancake recipe previously posted, but I omitted the protein powder and added some of this and that. You could always add protein powder, if you so incline. I’m sure it would be delicious, too!
Coconut & Banana Pancakes (with peanut butter glaze):

pancake batter:
1/3C Hodgson Mill Buckwheat Pancake Mix
1/3 + 2T unsweetened vanilla almond milk
1T quick oats
1t pb2 (powdered peanut butter)
1t chia seeds
1/2 of a melted banana
1t coconut oil
1/4t coconut extract
peanut butter glaze:
1T + 2t pb2
1/2t finely shredded coconut
1/4t coconut extract
1T sugar free syrup
2T liquid (unsw. vanilla almond milk is what I use)
In a tiny bowl, microwave 1/2 banana for :30. Remove, and stir in coconut oil and coconut extract.
In a medium bowl, combine buckwheat mix, oats, chia seeds, pb2, melted banana mix. Then add almond milk. (Add more liquid if needed for pancake consistency)
In a separate tiny bowl, mix the peanut butter glaze by combining pb2, shredded coconut, coconut extract, syrup, and liquid of choice. (Again, add more for consistency if needed)
Cook pancakes as pancakes loved to be 🙂 (Recipe can make 2 large, 3 medium, or several silver dollar sized pancakes)
Remove from griddle and stack. Top with peanut butter glaze, additional banana, and 1/2t shredded coconut. Serve with fruit!
Not a fan of coconut (at least not in anything that I consume) but that peanut butter glaze looks TO DIE FOR! Have to try to out … soon! 🙂

It’s great without coconut, too! Just 1T pb2, 1T sugar free syrup, & 1T liquid (or more for consistency). Perfect on pancakes or waffles!! You’d love it!
