I always have fruit in the house. Always. I feel like I can satisfy my sweet tooth with nature’s candy (most of the time). Pure, natural, delicious!
This week my fridge had an abundance of fruit (hence all of the fruit filled recipes). Needless to say, some of them were looking a little puny … especially my strawberries! I needed a way to save them and let them shine like they were meant to before I had to toss them in the trash 😦
3 ingredients, 5 minutes, and patience is all this recipe needs. Good luck finding the patience …
strawberry shortcake “ice cream” sandwiches:
Servings: 5
Serving Size: 1 sandwich
Points Per Serving: 2pp
1 1/4C (90g) fat free cool whip
5 medium strawberries, diced
5 sheets of low fat honey graham crackers (4 crackers/sheet)
In a medium sized bowl, fold together the diced strawberries and cool whip.
(If mixture becomes too runny, place in the freezer for a few minutes to firm up)
Take a graham cracker sheet and break in half. Take a heaping spoonful of the strawberry whip mixture and place onto a cracker. Top with other cracker.
(yay a sandwich!)
Place the sandwich on a piece of saran wrap and fold in all corners.
Repeat until all 5 sandwiches are made.
Place in the freezer for a few hours to harden. (This is where the patience comes in …)
Finally, after what seems like an eternity … they’re ready! *insert angels singing here*
They taste so much better than they look, but just take a gander at all those strawberry chunks! You could make them fancier by adding sprinkles to the sides: OR shredded coconut, mini chocolate chips, crushed graham crackers, the list goes on and on 🙂
